Egg White Frittata

Today, we are whipping up the perfect breakfast for meal prep, the frittata. Easy, low in fat, and high in protein, this can be made ahead and used all week. Plus, the variations on it are endless!

  • 1 yellow squash
  • 1 zucchini
  • 1/2 red onion
  • 1 red bell pepper
  • 1/2 lb. ham
  • 2 pints egg whites
  • 1 cup mozzarella
  • Salt
  • Pepper
  • 1 tbsp light olive oil
  1. Prep all ingredients.
  2. Sauté ham until crispy and add in vegetables. Cook until desired doneness.
  3. Add mixture into a greased baking dish. Top with mozzarella.
  4. Bake at 350 until eggs are set.
