Ingredients
- 2 lbs. mix of ground pork, veal, and beef (flexible)
- ½ onion, grated
- 2 stalks celery, grated
- 1 large carrot, grated
- 3 cloves garlic, minced
- 2 (32 oz) cans crushed tomatoes
- A few fresh basil leaves
- ¼ cup freshly grated parmesan cheese
- 1 package spaghetti
- U.S. Farm-Raised Catfish filets
- Creole seasoning, to taste
- Hot sauce, to taste
- ½ cup buttermilk
- 1 cup fish fry
- 1 cup flour
- 2 tbsp cornstarch
- Oil, for frying
- Sandwich bread
- Butter, for toasting bread

Prepare Meat Sauce:
Brown the meat mixture over medium heat, then drain and set aside.
Sauté the grated onion, celery, and carrot until soft. Add minced garlic and cook until fragrant, about 1 minute. Add the browned meat back into the pan. -
Simmer the Sauce:
Add the crushed tomatoes to the pan. Season to taste and simmer over low heat for 1 hour. Stir in fresh basil and grated parmesan cheese. Reserve ¼ of the sauce in a bowl for later. -
Cook the Spaghetti:
Cook the spaghetti according to package instructions. Once done, mix it into the pan with the sauce and simmer for 2 minutes. Remove from heat. -
Prep and Fry Catfish:
Slice the U.S. Farm-Raised Catfish filets thinly. Season generously with Creole seasoning, hot sauce, and buttermilk. Set aside.
In a shallow dish, mix the fish fry, flour, and cornstarch. Dredge the seasoned fish in the dry mix.
Heat oil to 350°F and fry the fish until golden brown and crispy on both sides. Drain on paper towels. -
Assemble the Sandwich:
