Fried Red Beans

You know on Monday we do that fresh pot of Red Beans, but what about the leftovers? How bout we fry 'em up ⬆️!!! I mean what could be more Southern than that!!!
Ingredients
  • 3 cups cold cooked red beans
  • 3 cups ish cornbread crumbles
  • 4 tbsp diced jalapeños
  • 3 Egg
  • 1/4 cp milk
  • Italian breadcrumbs
  • Oil for frying
Dip
  • 3/4 cp mayo
  • 1 tbsp creole mustard
  • Hot sauce to taste
  • 1 tbsp Worcestershire
  • Salt
  • Black pepper
  • Parsley
Directions
  1. Combine cold beans and cornbread crumbs. Break up with a fork any leftover meat in the beans. Add diced jalapeños. Set in fridge for 30 min.
  2. Whisk 3 eggs with a little milk and creole seasoning.
  3. Form red beans into balls about the size of a golf ball. Place in freezer for 30 min.
  4. Mix together sauce ingredients.
  5. Preheat oil to 350 and fry balls until golden.
  6. Serve hot with dipping sauce.
