4 Bean Rib Chili

This is an awesome take on a traditional cold weather comfort food. 4 BEAN BEEF RIB CHILI!!!! Encompassing 4 different dark beans and a much meatier profile by using pulled rib meat this will surely warm you to your core on those cold winter nights!!! For any chili fans this is a must try!! Ingredients
  • 2 racks beef ribs or 1 rack and 1 lb ground meat (pork ribs can absolutely be used for this)
  • granulated garlic
  • chili powder
  • dried herbs (Italian blend)
  • 1 red onion
  • 1 yellow onion
  • 1 poblano
  • 1 red or orange bell pepper
  • 4 cloves garlic
  • 1 can dark red kidney beans
  • 1 can light red kidney beans
  • 1 can black beans
  • 1 can pinto beans
  • 2 cans Zing Zang
  • 2 cans Rotel
  • 1 beer
  • 1 48 oz beef broth
  • cumin
  • coriander
  • ground ancho and chipotle powder
Directions
  1. Remove back membrane from ribs. Season ribs with Tony’s, garlic, herbs and chili powder. Smoke at 300 for 3 hours then wrap in paper and cook until semi tender. The same results can be achieved in the oven covering the ribs with foil and adding some liquid (if used, just go 3 hours at 400) we just need to get the meat off so it’s not too critical either way you cook them.
  2. Remove meat from the bone and discard all bones and tough cartilage.
  3. Small dice onions and peppers, mince garlic
  4. Cook ground meat if using (honestly, I had to use this because I used 1 rack of ribs and it wasn’t enough meat, but it still worked great)
  5. Add in vegetables and cook until clear and fragrant, add garlic.
  6. Add title and Zing Zang and simmer. Start layering your seasoning here. Add 3 tbsp chili powder, 2 tbsp Tony’s, 1 tbsp granulated garlic, 1 tsp ancho powder,1/2 tsp chipotle powder, 1 tsp cumin, 1 tsp coriander. Cook for 20 min.
  7. Add 48 oz beef broth
  8. Add 1 beer and cook down 1 hour
  9. Add beans and cook 1 hour
  10. Taste for seasoning and adjust to your liking
  11. Add rib meat and cook until fully tender and falling apart
  12. If the mixture isn’t thick enough remove some beans and mash up. Add back into pot and simmer longer.
  13. For a little something different finish with a squeeze of lime and some cilantro.
  14. Serve with cornbread.
