Bacon Fluffernutter Stuffed French Toast

If comfort food and childhood nostalgia had a breakfast baby, this would be it. This Bacon Fluffernutter Stuffed French Toast brings together crunchy peanut butter, toasted marshmallow fluff, and crispy bacon, all sealed inside thick slices of bread and coated in a golden cornflake crust.

It’s rich, indulgent, and unapologetically over the top—in the best possible way. Perfect for weekend brunch, special mornings, or anytime you want to surprise people at the table.

 

Ingredients

  • 1 cup cornflakes
  • 3 eggs
  • 1/4 cup heavy cream
  • 1 tsp brown sugar
  • 1 dash of salt
  • 2 slices bread
  • 1-2 tbsp crunchy peanut butter
  • 1-2 tbsp marshmallow fluff
  • 3 slices extra-crispy cooked bacon
  • 2 tbsp butter
  • Powdered sugar for garnish
  • Maple syrup for garnish

 

Directions

  1. Place cornflakes in a zip-top bag and crush with a rolling pin. Transfer to a shallow bowl.
  2. In another shallow bowl, whisk together eggs, heavy cream, brown sugar, and salt until smooth.
  3. Spread peanut butter on one slice of bread and marshmallow fluff on the other. Lightly torch the marshmallow side until just toasted. Add bacon, close the sandwich, and gently press together.
  4. Dip the sandwich into the egg mixture, allowing it to soak briefly, then coat thoroughly in crushed cornflakes, pressing to adhere.
  5. Melt butter in a skillet over medium-high heat. Cook until golden brown and crisp on both sides.

To Serve

Dust with powdered sugar and finish with warm maple syrup. Serve immediately while the center is gooey and the crust is extra crunchy.
