Ingredients

Crust

  • 2 cups Oreo crumbs
  • 1 tbsp sugar
  • 1 stick melted butter

Filling

  • 4 blocks cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla
  • 3 tbsp flour
  • 5 eggs, tempered
  • 1/2 cup heavy cream
  • 10-12 lightly crushed Oreos

Ganache

  • 3 XL cookies and cream bars, chopped
  • 1/2 cup heavy cream

Garnish

  • Whipped cream
  • Chocolate sauce
  • Crushed or whole Oreos

Directions

  1. Crust: Start by making the crust. In a bowl, mix cookie crumbs, sugar, and melted butter. Combine well and press into a springform pan. Bake at 350Β°F for 10-12 minutes. Allow to fully cool.
  2. Filling: Make the filling by mixing cream cheese, flour, sugar, and vanilla. Beat on medium-high for 3-5 minutes until fluffy and light.
  1. Add in the tempered eggs, one at a time, allowing each one to fully incorporate before adding the next. Once the eggs are combined, add in the heavy cream.
  1. Prepare for Baking: Set the oven to 325Β°F and set up a water bath. Seal the springform pan with an oven bag and aluminum foil. Heat the water for the water bath on the stove so that you can pour it in hot once the cake is in.
  2. Layering: Place enough of the filling mixture onto the cooked crust to cover the bottom. Add the lightly crushed Oreos, then top with the remaining batter.
  3. Bake: Bake in the water bath for 45 minutes to 1 hour. You want the outside of the cake to be firm with a slight jiggle in the middle.
  4. Cooling: To avoid cracking, cool the cheesecake slowly by turning the oven off, cracking the door open, and letting it cool to touch.
  5. Ganache: Make the ganache by melting the candy bars with the cream on low heat. Mix until smooth. Pour the warm mixture over the cake.
  6. Chill: Allow the cake to fully cool before refrigerating overnight.
  7. Slicing: To slice the cheesecake, once removed from the springform pan, use a large chef's knife, making sure to wipe the knife clean between every slice.
  8. Garnish: Optionally garnish with chocolate sauce, whipped cream, and Oreos.
