Herb Crusted Rack of Lamb

  1. Preheat oven to 350.
  2. Remove any silver skin from rack of lamb, season with Prime Beef and Chop Seasoning.
  3. Sear meat in oven-safe pan over medium-high heat; remove from heat and set aside.
  4. Add Mustard and Crust:
    • Brush the lamb with Creole mustard.
    • On a cookie sheet, combine the panko breadcrumbs and Low and Slow Simmer Seasoning. Mix thoroughly.
    • Dredge the lamb in the panko mixture, pressing the breadcrumbs onto the meat to create a crust.
  5. Place the crusted lamb back into the oven-safe pan, fat side up. Bake at 350°F until it reaches your desired level of doneness (about 15–25 minutes for medium-rare, depending on the thickness of the rack).
  6. Remove the lamb from the oven and let it rest for about 10 minutes. Slice and serve!
