Lengua Tacos

This may one of my more unique recipes, but if you’re adventurous this is definitely worth a try!!! Beef tongue braised down is some of the richest and tenderest meat from the cow. If you’re into it here are my Birria-style lengua tacos!
Ingredients
  • 1 beef tongue
  • 1 onion
  • 1 bell pepper
  • 4 cloves garlic
  • 1 Roma tomato
  • 2 stalks celery
  • 1/2 bunch green onion
  • 1 jalapeño
  • 1/2 bunch parsley
  • 1 tbsp chipotle purée
  • 1 tsp cumin
  • Salt and pepper
  • 1 qt beef stock
  • Corn tortillas
  • Cotija cheese
  • Marinated onions (white onions with lime juice and cilantro)
Directions
  1. Rough chop all vegetables and place in pressure cooker with beef tongue. Season and add stock and purée. Cook 60 min and allow to cook some.
  2. Remove meat and peel outer layer off. Slice into 1/2” slices. Blend liquid mixture with a stick blender.
  3. Brown off sliced meat in sauté pan. Season and add in some of the braising liquid.
  4. Dip tortillas in braising liquid and toast in separate pan. Add cheese and top with meat and pickled onions.
