Pimento Cheese Dip

Everyone loves a good pimento cheese dip at parties. Level that up with this spicy version containing roasted poblano and hatch chiles. Pay attention because we’ll also use this for another mind-blowing favorite!!
  • 1 cp grated white cheddar
  • 1 cp grated sharp cheddar
  • 8 oz soft cream cheese
  • 1 poblano
  • 1 hatch chili
  • 1 4 oz jar diced pimentos
  • Garlic powder
  • Paprika
  • Chipotle powder
  • Chili roasted pistachio pieces
  1. Roasted peppers by spraying with olive oil and placing under high broiler until charred.
  2. Once charred on all sides place in metal bowl and cover with plastic wrap. After 10 minutes skin should peel off. Remove skins and de-seed. Dice peppers and reserve.
  3. Mix remaining ingredients.
  4. Top with chopped pistachios if desired.
