Ingredients
- 1 head garlic
- olive oil
- 5 large red potatoes
- 1 cup heavy cream
- 1 stick butter
- 1 sprig rosemary
- 1 shallot
- salt
- pepper

Directions
- Cut head from the top of garlic. Drizzle with olive oil and salt. Wrap in aluminum foil and bake at 350 for 1 hour until browned.
- Cut any bad spots from potatoes but leave majority of the skin on. Cube into 1" pieces and boil until tender.
- In another pot add cream, butter, salt, pepper, rosemary and peeled shallot and allow to steep over low heat.
- Drain potatoes well and place back into pot.
- Remove shallots and rosemary from cream and add into potatoes.
- Mash to desired consistency and season to taste.
