Roasted Garlic Mashed Potatoes

  • 1 head garlic
  • olive oil
  • 5 large red potatoes
  • 1 cup heavy cream
  • 1 stick butter
  • 1 sprig rosemary
  • 1 shallot
  • salt
  • pepper



  1. Cut head from the top of garlic. Drizzle with olive oil and salt. Wrap in aluminum foil and bake at 350 for 1 hour until browned.
  2. Cut any bad spots from potatoes but leave majority of the skin on. Cube into 1" pieces and boil until tender.
  3. In another pot add cream, butter, salt, pepper, rosemary and peeled shallot and allow to steep over low heat.
  4. Drain potatoes well and place back into pot.
  5. Remove shallots and rosemary from cream and add into potatoes.
  6. Mash to desired consistency and season to taste.
