Part 6 of my healthy cooking series is this amazing skin-on salmon seared on cast iron and finished in the oven for a remarkable crust and ultra-crispy skin served with sesame-seasoned roasted broccoli.

Ingredients

2 6 oz salmon fillets with skin

2 tbsp salmon magic

2 tbsp light olive oil

2 small heads broccoli

1 tsp sesame oil
-
1 tsp white sesame seeds

1 tsp black sesame seeds
Directions

Preheat oven to 425 on convection.

Prep broccoli. Coat with sesame oil and season. Coat with 1 tbsp olive oil and sesame seeds. Place on baking rack and roast in oven for 35 minutes.

Preheat oven-safe pan on stovetop on med-high heat.

Rinse and dry salmon well. Score skin. Season with salmon magic.

Place oil in hot skillet and lay salmon skin side down in pan. Cook 2-3 minutes and place pan in oven to roast.

Cook until nice crust forms and salmon feels slightly firm. About 10 minutes.
