Roasted Salmon with Sesame Broccoli

Part 6 of my healthy cooking series is this amazing skin-on salmon seared on cast iron and finished in the oven for a remarkable crust and ultra-crispy skin served with sesame-seasoned roasted broccoli.

  • 2 6 oz salmon fillets with skin
  • 2 tbsp salmon magic
  • 2 tbsp light olive oil
  • 2 small heads broccoli
  • 1 tsp sesame oil
  • 1 tsp white sesame seeds
  • 1 tsp black sesame seeds
  1. Preheat oven to 425 on convection.
  2. Prep broccoli. Coat with sesame oil and season. Coat with 1 tbsp olive oil and sesame seeds. Place on baking rack and roast in oven for 35 minutes.
  3. Preheat oven-safe pan on stovetop on med-high heat.
  4. Rinse and dry salmon well. Score skin. Season with salmon magic.
  5. Place oil in hot skillet and lay salmon skin side down in pan. Cook 2-3 minutes and place pan in oven to roast.
  6. Cook until nice crust forms and salmon feels slightly firm. About 10 minutes.
