Salted Bourbon Chocolate Chunk Cookies

These chocolate chunk cookies are truly exceptional. With notes of espresso and bourbon, topped with flaky sea salt these are anything but a boring cookie.
Salted Bourbon Chocolate Chunk Cookies
  • 1/2 cup butter (room temp)
  • 2/3 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 tbsp bourbon
  • 1-1/2 tsp instant espresso powder
  • 1/4 tsp salt
  • 1-2/3 cp flour
  • 1tsp baking powder
  • 4 oz semi-sweet chocolate (chunked)
  • Very flaky salt
  1. Mix sugars and butter until creamed.
  2. Add in egg and bourbon.
  3. Sift dry ingredients then mix with butter mixture
  4. Mix in chocolate chunks.
  5. Wrap in Saran Wrap to form a cylinder. Freeze 15 minutes then cut into 1” rounds
  6. Place on greased cookie sheet. Sprinkle with flaky salt and bake at 350 for 14 minutes.
  7. Allow to cool on pan for 5 minutes the transfer to wire rack.
