Smothered Cabbage

In the South, the start of the new year comes with a delicious tradition that's both comforting and symbolic - Smothered Cabbage. This hearty dish holds a cherished place at Southern tables on New Year's Day, offering a taste of heritage and hope for the months ahead.

This flavorful medley of tender cabbage and savory smoked sausage is more than just a meal; it's a tradition steeped in meaning. Cabbage represents green, symbolizing prosperity and wealth for the coming year. When paired with smoked sausage, the dish takes on a rich and comforting character that speaks to the warmth of family and community

 

 

Ingredients

  • 1 head cabbage diced
  • 6 strips bacon
  • 3 links smoked sausage, sliced
  • 2 small onions, diced
  • 5 cloves garlic
  • 1/2 stick butter
  • 1/2 cup chicken stock
  • 1-2 drops of liquid crab boil
  • Boudreaux's Fire and Smoke Seasoning

 

Directions

  1. Dice up bacon and add to a heavy bottom pan on low. Slowly let the fat render out.
  2. Once almost cooked add in smoked sausage until browned.
  3. Add in diced onions and cook until soft then add garlic and butter.
  4. Deglaze pan with 1/2 cup chicken stock
  5. Add in cabbage as much as you can. Add on lid and allow to cook down while continuing to add in cabbage till it all fits.
  6. Season to taste and serve.
