Cauliflower Rice with Blackened Chicken

Part 2 of my healthy cooking series is the dreaded cauliflower rice, but I promise if you follow this recipe you will learn to love it. I personally love it because I can impart many flavors and have plenty of it for a low caloric load.

  1. Prep and season chicken breast. In a hot skillet, add 1 tbsp oil and blacken chicken.
  2. Remove chicken from pan and add in remaining olive oil. Add in onions, peppers and garlic. Cook until soft.
  3. Add in cauliflower rice and cook on med-high for 5 minutes, stirring often.
  4. Add in chicken base and incorporate. Season with desired seasoning.
  5. Cook until rice is slightly browned and excess moisture is gone.
  6. Place into individual containers with sliced chicken breast, avocado and salsa.
