Part 2 of my healthy cooking series is the dreaded cauliflower rice, but I promise if you follow this recipe you will learn to love it. I personally love it because I can impart many flavors and have plenty of it for a low caloric load.
Ingredients 
- 
1 bag cauliflower rice
 - 
1/2 onion, diced
 - 
1/2 bell pepper, diced
 - 
3 cloves garlic, minced
 - 
1 tbsp chicken base
 - 
1 avocado
 - 
3 tbsp salsa
 - 
3 chicken breasts
 - 
2 tbsp light olive oil

Directions
- 
Prep and season chicken breast. In a hot skillet, add 1 tbsp oil and blacken chicken.

Remove chicken from pan and add in remaining olive oil. Add in onions, peppers and garlic. Cook until soft.
 - 
Add in cauliflower rice and cook on med-high for 5 minutes, stirring often.
 - 
Add in chicken base and incorporate. Season with desired seasoning.
 - 
Cook until rice is slightly browned and excess moisture is gone.
 - 
Place into individual containers with sliced chicken breast, avocado and salsa.
