Ingredients
- 1/2 lb. Camellia black eyed peas
- 1/2 lb. Camellia black beans
- 3 ears of corn
- 1/2 red bell pepper
- 1/2 red onion
- 4 green onions
- 2 small tomatoes
- Pickled peppers
- 1/2 bunch cilantro
- 3 limes
- 4 cloves garlic
- 3/4 cup olive oil
- Boudreaux's Lil' Bit Better Creole seasoning
- Boudreaux's Prime Beef and Chop seasoningÂ

Directions
- Precook beans until tender. I used a pressure cooker but they can also be boiled.
- Shuck corn and remove fibers. Drizzle with olive oil and season with Lil bit better creole seasoning. Grill corn until charred. Allow to cool and remove from cob.
- Small dice vegetables and combine in bowl.
- Make dressing by adding minced garlic and cilantro into a bowl with lime juice, peppers, pepper juice, seasoning and olive oil.
- Pour dressing over mixture and combine.
