Ingredients
- 1 onion
- 1 large potato
- 3 tbsp. roasted and diced hatch chiles
- Boudreaux's Backyard Fire & Smoke Creole Seasoning
- 1 tube breakfast sausage
- 1 dozen eggs
- 4 oz. Hatch Chile Gouda cheese, grated
- 1/2 cup salsa verde
Directions
- Preheat oven to 400.
- Dice onion and potato, add to baking dish.
- Add chiles and season to taste with Fire & Smoke Creole Seasoning.
- Roast in preheated oven until golden brown and crispy.
- Brown breakfast sausage in skillet until cooked through, drain, set aside.
- In large bowl, add eggs. Season to taste and whisk.
- Carefully remove potato mixture from oven. Top with sausage, add eggs. Drizzle with salsa verde and sprinkle with the grated cheese.
- Bake until eggs are set and cheese turns golden brown.
