Viral Golden Diner Pancakes — Mardi Gras Style
The internet-famous Golden Diner pancakes just caught Carnival fever. These ultra-fluffy, skillet-to-oven pancakes get a cinnamon-sugar swirl baked right inside, then are finished with a cream cheese icing drizzle and Mardi Gras sprinkles. Pancake Batter (Base Recipe)
- 2 cups all-purpose flour
- Heaping ⅓ cup sugar
- 1 tsp kosher salt
- 1½ tsp baking powder
- 1½ tsp baking soda
- 1¼ cups milk
- 1¼ cups buttermilk
- ¼ cup neutral oil
- 2 large eggs
- 1 tsp vanilla
Cinnamon Filling
- 1 cup brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp softened butter
Mix together until crumbly and set aside.
Cream Cheese Icing
- 1 cup powdered sugar
- ½ block cream cheese, softened
- 1 tsp vanilla
- 1 tbsp milk (plus more as needed)
Mix powdered sugar, vanilla, and milk until smooth. Add softened cream cheese and whip until creamy. Adjust milk for piping consistency. Transfer to a piping bag or zip-top bag.
Toppings
- Purple, green & gold sprinkles
Directions
- Whisk together all dry pancake ingredients in a large bowl.
- In another bowl, whisk milk, buttermilk, oil, eggs, and vanilla.
- Combine wet and dry ingredients gently — don’t overmix. Let batter rest while heating the pan.
- Preheat an oven-safe skillet over low–medium heat and preheat oven to 375°F.
- Lightly grease skillet. Add 1 ladle of pancake batter, sprinkle a generous amount of cinnamon filling evenly over the batter, then top with ½ ladle more batter to cover.
- Cook on the stovetop for 4 minutes, until edges are set.
- Transfer skillet to the oven and bake for 5 minutes until fluffy and cooked through.
- Remove pancakes and repeat with remaining batter.
- Pipe cream cheese icing over warm pancakes and finish with Mardi Gras sprinkles
