Pit Loaded Potatoes

Elevate your BBQ side dishes with my Ultimate Pit Loaded Potatoes! These cheesy, spicy, and bacon-topped potatoes are cooked to perfection on the pit, making them the ideal addition to any BBQ feast. 

 

 

Ingredients:

 

- 2 pounds red potatoes, cubed

- 1 stick butter, cubed

- 1 block cream cheese, cubed

- 1/4 cup diced jalapenos with juice

- 1/4 cup sour cream

- 1/2 bunch green onions, sliced

- Boudreaux's Backyard Fire & Smoke Creole Seasoning, to taste

- 8 oz. of your favorite cheese, shredded

- Fresh crumbled bacon, to taste

 

Directions:

 

1. Boil cubed potatoes for 10 minutes, drain, and add to an aluminum pan.

2. Add butter, cream cheese, jalapenos, sour cream, green onions, and seasoning to the pan with potatoes. Mix well.

3. Cover securely with aluminum foil.

4. Place on the pit at 300°F for about 30 minutes. Remove foil, mix, add cheese and bacon, and cook uncovered for an additional 30 minutes.
