Directions

  1. Preheat oven to 425 on convection. Heavily oil a cast iron skillet and allow to heat with oven.
  2. Clean and dry chicken wings well.
  3. Season with Boudreaux's Fire and Smoke and Low and Slow. Dust wings with cornstarch. Rub into all sides.
  4. Carefully assemble wings in a single layer in cast iron.
  5. Bake for 15 minutes on one side.
  6. Make sauce by cooking garlic in butter until soft. Add marmalade, pepper puree and vinegar. Once thick squeeze in citrus
  7. Flip wings and bake 15 more minutes. Flip once more and broil for 5 minutes being careful not to burn.
  8. Β Remove and cover with sauce and broil 5 more minutes.
