Part 7 of my healthy cooking series: these PHILLY CHEESESTEAK STUFFED BELL PEPPERS are the perfect meal if you’re doing a low carb or keto plan.
Ingredients 
- 
3 bell peppers
 - 
1 purple onion
 - 
1 pack mushrooms
 - 
12 oz sirloin steak
 - 
1 oz cheddar cheese
 - 
2 tbsp light olive oil
 - 
1/4 cup beef stock
 
Directions
- 
Cut 2 peppers in half and remove the stems, seeds and ribs. Place in the oven at 400 for 12 minutes or desired tenderness.
 - 
Thinly slice onion, pepper and mushrooms.
 - 
Place steak in the freezer for about 20 minutes to help firm up and thinly slice.
 - 
In a very hot pan, add 1 tbsp of light olive oil and brown steak quickly. Season and remove from pan.
 - 
Add in vegetables and cook until soft. Season and add in beef stock. Cook until liquid is evaporated and add beef back to pan.
 - 
Put mixture into cooked peppers and top with a little sharp cheddar cheese. Broil until golden brown.
