Philly Cheesesteak Stuffed Bell Peppers

Part 7 of my healthy cooking series: these PHILLY CHEESESTEAK STUFFED BELL PEPPERS are the perfect meal if you’re doing a low carb or keto plan.
  1. Cut 2 peppers in half and remove the stems, seeds and ribs. Place in the oven at 400 for 12 minutes or desired tenderness.
  2. Thinly slice onion, pepper and mushrooms.
  3. Place steak in the freezer for about 20 minutes to help firm up and thinly slice.
  4. In a very hot pan, add 1 tbsp of light olive oil and brown steak quickly. Season and remove from pan.
  5. Add in vegetables and cook until soft. Season and add in beef stock. Cook until liquid is evaporated and add beef back to pan.
  6. Put mixture into cooked peppers and top with a little sharp cheddar cheese. Broil until golden brown.
